My Chili
¼
c vegetable oil                                4 med. onions chopped
3 garlic cloves chopped                    3 lb lean ground beef
2 28 oz cans chopped tomatoes      3 16 oz cans kidney beans
¼ c red wine vinegar                         3 T chili powder
½ T & 1 t ground cumin                   1 t ground oregano
1 t cayenne pepper                            2 4oz cans chopped green chilis
salt                                                       pepper
Heat oil in Lg dutch oven on med heat, saute onions & garlic until soft.  Remove with slotted spoon & set aside.  Add meat to hot pan & brown, drain off excess fat.  Reduce heat, add back in onions & garlic.  Stir in tomatoes & juices, beans (reserve juices), vinegar, spices.  Add bean juice if necessary.  Bring to boil, reduce and simmer stirring occasionally for 30 minutes.  Chili freezes well.

Chicken in Citrus Sauce
½ c water                                                2 T cut orange rind
1 T cut lemon rind                                1 t cut lime rind
¾ c orange juice                                   2 T grapefruit juice
2 t lemon juice                                      2 t lime juice
¾ c chicken broth                               ¼ c white wine
1 t sugar                                                ¼ t salt
¼ t pepper                                            8 chicken thighs skinned
1 t butter                                               1 T white wine vinegar
½ t cornstarch    
Combine first 5 ingredients in sm sauce pan , bring to boil.  Cover , reduce heat simmer 10 min, drain, reserving citrus rind, combine citrus rind, citrus juices, broth, wine & sugar in a sm bowl, stir well, set aside.  Sprinkle salt & pepper over chicken, cook 3 min on each side.  Add juice mixture, cover, reduce heat, & simmer 35 min.  Remove chicken & keep warm.  Combine vinegar & cornstarch, stir well.  Add cornstarch mixture to juice mixture in skillet, simmer 10 min.or until thickened, stirring constantly.  Spoon over chicken. 
Sicilian Meatloaf Brasciole
½ lb each ground beef, veal, pork                            salt & pepper
½ c Italian bread crumbs                                           1 egg
2 cloves minced garlic                                               ¼ grated sm white onion
2 T golden raisins                                                       3 T chopped pine nuts
2 T grated Parm. cheese                                            2 T chopped parsley
1 c spinach or arugula leaves                                   6 slices prisciutto 
6 slices provolone cheese                                        Olive oil    
Preheat oven to 450º  Mix meat & next 10 ingredients.  Flatten meat out on waxed paper lined cookie sheet to ½ in. thick X 12 in. long X 8 in. wide.  Cover meat with arugula or spinach, prosciutto & cheese and roll using waxed paper to help roll up into a lg log, working across the 8 in. side, resulting in a 12 in. long log.  Drizzle the log with olive oil to coat lightly.  Roast for 20 minutes.  Cut into 1 in. thick slices.
African Chicken
1 cut up, skinned chicken                                2 med onions, sliced
1/3 c lime juice                                                   1½ T chopped garlic
½ t red pepper flakes                                        1 T grated fresh ginger
½ t salt                                                                ¼ t pepper
2 T corn oil                                                         1 c chicken stock

Combine onions, lime juice, garlic, pepper flakes, ginger, salt & pepper in a lg bowl.  Rub chicken in mixture.  Heat oil in lg pot.  Brown chicken, discard oil.  Add marinate to pot & chicken stock, deglaze pot.  Add chicken & simmer for 1 hour
Slow Cooker Corned Beef & Cabbage
4 c hot water                                        2 T cider vinegar
2 T sugar                                              Fresh ground pepper
1 lg onion cut in wedges                   1 3 lb corned beef w/spices
8 sm pototoes cut into quarters       1 head cabbage cut into wedges
In 6 quart slow cooker combine the water, vinegar, sugar, pepper and onions, mixing well.  Place the corned beef & it's spices in the mixture.  Add the potatoes on top and along sides.  Cover and cook on high 4 hours.  Remove lid and add cabbage, cover and cook on high 3 to 4 hours longer.  Serve with brown mustard.



Chicken Rollatini
Cooking spray                                    4 boneless , skinless chicken breast
8 ounces thinly sliced ham               1 c spinach leaves, chopped
4 ounces goat cheese                        2 T Dijon mustard
1 c Italian bread crumbs                    1 T olive oil

Preheat oven to 400º.  Spray lg baking dish.  Pound chicken breast to ¼ inch thickness.  Arrange on flat surface.  Top each with ham.  Mix spinach & goat cheese & spread over ham.  Starting from the shorter end, roll up chicken & secure with wooden picks.  Brush mustard over chicken rolls & roll in bread crumbs.  Heat oil in lg oven proof skillet over med heat.  Brown chicken rolls on all sides.  Transfer to oven and bake 20 minutes until chicken is cooked through.
